Maggie Lynch’s rich, hearty twist on the Italian classic – full of flavour, minus the pasta!
INGREDIENTS
4 tbs One Nutrition Organic Pure MCT Oil
200g bacon rashers, finely diced
600g minced beef (92% beef)
50g garlic, finely chopped (2 large cloves)
250g onion, finely chopped (2 medium onions)
120g leek, finely diced (1/2 medium leek)
250g carrot, finely diced (2 large carrots)
160g chestnut mushrooms, finely diced
1 tbs dried basil
2 tbs dried marjoram or oregano
3 tbs tomato puree
300ml red wine (optional can replace with stock or water)
300ml beef stock (or 1 Kallo stock cube)
700g tomato passata
1 tbs white vinegar
150g cabbage per person, finely shredded (red or green)
METHOD
1. In a large oven-proof pot gently heat 2 tablespoons MCT oil, add diced bacon and gently fry until bacon starts to turn golden, add mince and fry for five minutes, breaking and stirring occasionally until it has browned. Remove from the pan and set aside.
2. Return pot to heat, add the rest of MCT oil and garlic, gently fry for 1-2 minutes. Add onions, leek and carrots, continue to cook for another 5-8 minutes. Next add mushrooms and cook for a further 5 minutes until soft. Add mince mixture back to pot.
3. Add herbs, cook for 1 minute. Add tomato puree and cook 30 seconds, add red wine, cook for 3-5 minutes then add stock and tomato passata, stir well and bring to a simmer. Cover with lid and place in the oven at 150˚C for 1½ hours until sauce has thickened. Remove from the oven and season to taste.
4. To prepare cabbage noodles: Bring a large pot of water and vinegar to a rolling boil, add in the shredded cabbage and gently simmer for 5 to15 minutes, depending on type of cabbage and how finely shredded. Strain, and if not using right away transfer to a bowl of cold water to chill, then strain again. Lay cabbage on kitchen paper to remove excess water. Transfer to a large bowl and set aside until required.
5. To serve: Divide the cooked cabbage noodles between dishes, spoon equal portions of bolognaise sauce over each and sprinkle with lots of Parmesan.
